Tasting Note

Bright passionfruit, gooseberry and lime with wet-stone/mineral and herbaceous notes. Crisp, racy acidity, chalky mid-palate and a long citrus-tinged finish.

Oysters, scallops, grilled white fish, ceviche, goat cheese, roast chicken; sushi, sashimi, Thai green curry, Vietnamese green papaya salad.


Production Method

Estate-grown, low-yield hand-harvested fruit; cool stainless-steel fermentation (minimal intervention), some indigenous yeast influence, no fining and light filtration.
