Tasting Note
Full-bodied, textural Sauvignon Blanc with lime, white grapefruit, white peach and dried pineapple, lemongrass and wild herbs, flinty/chalky minerality, subtle smoky oak and vibrant acidity leading to a long, precise finish.

Western: oysters, chilled shellfish, grilled/poached white fish, roast chicken with herbs, soft cheeses (chèvre, brie). Asian: sashimi/sushi, ceviche, Vietnamese spring rolls, Thai green curry, herb-forward seafood dishes.
Production Method
Hand‑harvested fruit, whole‑bunch pressed, fermented (largely wild/indigenous yeasts) and aged ~18 months in older French oak barrels; bottled unfined; screwcap closure.
