Tasting Note

Concentrated, oak‑aged Sauvignon Blanc: flinty grilled lemon and lime, passionfruit and white peach, toasted hazelnut and oatmeal notes, saline minerality and herbal bay. Creamy texture with bright acidity and a long, savory finish.

Western: grilled tuna or salmon, roasted chicken with creamy mushroom sauce, butter‑poached lobster, soft white cheeses. Asian: sashimi/sushi, miso‑glazed fish, Vietnamese lemongrass chicken, Chinese stir‑fried greens, mild Thai coconut curries.

Hand‑harvested, whole‑cluster pressed; indigenous yeast fermentation and 18 months aging in used French oak barrels on lees; bottled unfined under screwcap.
