Tasting Note

Ripe citrus and white peach with herbaceous gooseberry, struck-flint/smoky sulfur notes, nutty lees and chalky minerality. Creamy, full-bodied texture balanced by bright acidity and a long herbaceous finish.


Food Pairing

Western: roasted chicken, grilled scallops, creamy seafood pasta, goat cheese. Asian: sashimi/sushi, Vietnamese herb salads, lightly spiced Thai green curry, grilled miso-glazed fish.


Production Method

Barrel-fermented in old French oak and aged ~18 months with regular lees stirring; minimal racking, bottled with minimal filtration; organic practices and selective hand-harvest.
