Tasting Note

Barrel-fermented Sauvignon Blanc with grapefruit, lemon-tart, honeyed peach, hazelnut and leesy flint; bright acidity, creamy texture and a long saline, mineral finish.


Food Pairing

Grilled or pan-seared salmon, roasted chicken, creamy goat cheese; Asian: sashimi/sushi, Thai green curry, Vietnamese seafood, spicy stir-fries and shellfish dishes.


Production Method

Hand-harvested Sauvignon Blanc pressed to older French oak, barrel-fermented with regular lees stirring (≈18 months), minimal intervention, native and selected yeasts, little/no malolactic.

Founded 2002 by James Healy and Ivan Sutherland; estate fruit from older vines, organically farmed with low yields and minimal-intervention winemaking.
