Tasting Note

Creamy, barrel-influenced Sauvignon with bright citrus and white-peach fruit, gooseberry and asparagus notes, struck-match/mineral and nutty lees complexity, vivid acidity and a long, savory finish.

Western: grilled salmon, roast chicken, creamy pasta, goat cheeses, asparagus, seafood ceviche. Asian: sushi/sashimi, Thai green curry (milder versions), Vietnamese fresh spring rolls, Chinese steamed fish with ginger & scallions.


Production Method

Hand-harvested, whole-bunch pressed; native-yeast fermentation in older French oak barrels, ~18 months lees contact with regular bâtonnage; minimal filtration and bottled under cork. Estate organic practices.
