Tasting Note

Bright grapefruit, lime and passionfruit with herbal cut-grass notes, flinty/mineral edges and a clean, saline finish. Ripe tropical hints but lively acidity and a mouthfilling texture.

Food Pairing

Western: oysters, grilled salmon, goat cheese, lemon roast chicken, ceviche. Asian: sushi/sashimi, Vietnamese spring rolls, Thai green papaya salad, ginger-scallion fish, lighter seafood curries.

Production Method

Hand-harvested, low-yield fruit; primarily stainless-steel fermentation (partially with native yeasts), minimal intervention, bottled unfined with light filtration; screwcap closure.
