Tasting Note
Perfumed red with wild strawberry, cherry and dark plum, violet florals, baking spice and savory herb notes. Silky, fine-boned tannins, medium body and a long, earthy, savory finish.
Food Pairing
Western: roast duck, venison, lamb, mushroom risotto, pork tenderloin. Asian: char siu or hoisin duck, teriyaki salmon, miso aubergine, mushroom soba, Korean BBQ (lighter cuts).
Production Method
Hand-harvested; ~70% destemmed, ~30% whole-bunch; indigenous yeast fermentation in small open-top fermenters; aged ~18 months in French oak (≈30% new); minimal intervention, often bottled without fining or filtration.
Vineyard Info
