Food Pairing
Western: roast duck, lamb, venison, mushroom risotto, pork loin. Asian: Peking duck, char siu, miso-glazed salmon, soy/ginger mushroom stir-fry, yakitori-style chicken.
Production Method
Hand-harvested fruit; small open-top fermentations with indigenous yeasts; c.25% whole-bunch inclusion; pressed to French oak (approx.30% new) and matured ~18 months.
