Tasting Note
Ripe citrus (lemon, tangerine) with mealy, hazelnut and oatmeal notes, subtle smoky oak. Textural and saline, with glycerol richness, focused mid‑palate and a long, elegant, savoury finish.

Western: roast chicken, lobster or creamy seafood, mushroom risotto, grilled salmon, pork belly. Asian: miso‑glazed cod, seared scallops with yuzu, tempura, sushi (tuna/hamachi), mild coconut or mango curries.
Production Method
Hand‑harvested, whole‑cluster pressed; wild (indigenous) yeast fermentation and full/partial malolactic in French oak; ~18 months lees ageing in 10% new barrels; minimal intervention and filtration; organically farmed.
