Tasting Note
Bright lemon and white-peach core with flinty oyster-shell salinity, toasted hazelnut and brioche from oak; racy acidity, creamy mid-palate and a long citrus-driven finish.
Food Pairing
Western: scallops, oysters, lobster, roast chicken, creamy mushroom pasta, pork belly. Asian: miso-glazed cod, tempura prawns, Cantonese roasted pork, mildly spiced Thai coconut curry, sushi (richer cuts).
Production Method
Whole-bunch pressed straight to French oak barrels (c.18 months; ~10% new), 100% indigenous primary and secondary fermentations, malolactic and bâtonnage; bottled without fining and with minimal filtration, screwcap closure.

Founded by Ivan Sutherland and James Healy; estate low-yield, old-vine Chardonnay (predominantly Mendoza with Clone 95) on clay/silt-loam soils; organically farmed and family-owned in Marlborough.
