Tasting Note
Bright red cherry, cranberry and raspberry with floral lift, forest-floor and mineral undertones; subtle spice and seasoned oak, fine-grained tannins and a long, saline-tinged finish.

Food Pairing
Western: roast duck, mushroom risotto, roast pork, soft cheeses. Asian: Peking duck, mushroom ramen, soy-glazed salmon, char siu pork. Lightly spiced Southeast Asian dishes also pair well.

Production Method
Hand-picked fruit; wild/indigenous fermentation with ~60% whole-bunch; ~3 weeks maceration; pressed to 500L French oak puncheons (≈13% new) and matured ~15 months; minimal intervention, unfined/unfiltered.

Vineyard Info
Denton family estate on 'View Hill' (planted 1997–2004); steep granitic sand over boulders; Luke Lambert has overseen winemaking since 2015.
