Tasting Note
Medium-bodied, mineral-driven Chardonnay with citrus and white peach, nougat and wet-stone minerality. Subtle toasted almond and lees creaminess, bright acidity, flinty saline finish and a gentle phenolic grip; restrained oak and balanced texture.

Food Pairing
Western: roast chicken, creamy mushroom risotto, seared scallops, lobster or pork belly. Asian: miso-glazed black cod, tempura prawns, chicken katsu, salmon sushi, mild Thai green curry.

Production Method
Whole-bunch pressed, wild-yeast fermentation with full malolactic; matured in old French oak puncheons on lees with occasional stirring; bottled unfined and unfiltered.

Vineyard Info
Denton Wines, established 1996 by John & Simon Denton. Estate 'View Hill' (planted late 1990s) sits on granitic sandy soils at Yarra Glen. Vineyard-focused, minimal-intervention winemaking; Luke Lambert oversaw Chardonnays around 2020.
