Tasting Note
Concentrated blackcurrant and cassis with dark cherry, bay leaf, cedar and dark chocolate. Medium–full body, savoury herb undertones, fine-grained tannins and a lingering, earthy finish.

Food Pairing
Roast lamb, beef short ribs, aged cheddar; Western-style stews and grilled steak. Asian pairings: Korean BBQ (galbi), char siu or hoisin duck, Sichuan-style braised beef, and richer Japanese dishes like miso-marinated grilled meats.

Production Method
Hand-harvested, wild/native yeast fermentation, pressed to French oak puncheons (small portion new), matured in puncheons and bottled without fining or filtration.
