Tasting Note

Perfumed red and black fruits (raspberry, plum, pomegranate) with peony florals, warm spice, orange rind and forest-floor notes. Full-bodied, supple texture, melting tannins and a long, saline, rose‑inflected finish.


Food Pairing

Western: roast beef, rack of lamb, game birds, mushroom risotto, aged Comté or Gruyère. Asian: Peking duck, Korean bulgogi, soy-miso glazed fish, braised beef short ribs.


Production Method

Hand-harvested; partial whole‑cluster fermentation (~60–66%); indigenous yeasts; 18 months in oak (c.80% new); low yields; bottled unfined and unfiltered.
