Tasting Note
Delicate salmon-pink with fine mousse. Aromas of wild strawberry, raspberry, rose petal and citrus peel; chalky minerality and a saline finish. Silky texture and bright red-fruit purity.
Food Pairing
Western: smoked salmon, roast chicken, tuna tartare, charcuterie, raspberry desserts. Asian: sushi/sashimi, tempura, Vietnamese spring rolls, mildly spicy Thai or Chinese seafood dishes.
Production Method
Traditional method (méthode champenoise). Rosé created by blending c.12% Pinot Noir red wine with Chardonnay; aged on lees ~30–36 months, light dosage (brut).
