Tasting Note
Citrus and white-fleshed fruits with floral lift, sea-salt minerality and subtle toasted oak. Creamy mid-palate, vibrant acidity, hints of honey and vanilla; long, saline, focused finish.

Western: oysters, grilled scallops, sea bass, roasted chicken, creamy mushroom pasta. Asian: sushi/sashimi, tempura, grilled squid, Thai seafood curry, Vietnamese rice-noodle salads.

Production Method
Hand-harvested old-vine field blend; gravity-fed to press, cold-settled; fermented in French oak and in 1962 cement vats; partial malolactic; aged in barrel and cement with minimal intervention.
