Tasting Note
Bright ruby; mineral-driven red and dark berries with floral and cocoa notes. Silky texture, polished yet present tannins, fresh acidity and a long, savoury finish.

Western: roast game (venison, partridge), duck, lamb, beef, mushroom and truffle dishes. Asian: Peking duck, char siu, bulgogi, braised pork belly, mushroom hotpot or shiitake-based dishes.

Production Method
Hand-harvested old-vine grapes; strict field and cellar sorting; natural fermentation in 1962 cement vats; part-aged ~20 months in French oak, remainder aged in cement; malolactic in vat.
