Tasting Note

Citrus and elderflower with grapefruit and subtle grassy, floral notes. Talcy texture and a softened mid-palate from malolactic fermentation; lively yet restrained acidity and a gently persistent finish.

Western: oysters, grilled white fish, goat cheese salad, roasted chicken, light pasta. Asian: sushi/sashimi, ceviche, Vietnamese spring rolls, mild Thai fish curry, fresh Thai or Vietnamese salads.


Production Method

Wild-fermented with indigenous yeasts; 2022 underwent 100% malolactic, aged in old puncheons and stainless; minimal sulfur at bottling; unfined/unfiltered (minimal intervention, organic).
