Awards/Ratings
consistently positive retailer and critic notes for vibrant, natural style. Producer earned B Corp certification 2023
Tasting Note
Bright red cherry and raspberry with savoury, earthy undernotes, a touch of five-spice and cedar. Medium-bodied, lively acidity, gentle tannins and a slightly meaty, savory finish (approachable, slightly wild style).
Food Pairing
Roasted duck, lamb, pork belly, mushroom risotto, grilled salmon, seared tuna; Asian: char siu, Peking duck, miso-glazed salmon or aubergine, teriyaki dishes, ramen with pork or mushrooms.
Production Method
Hand-harvested, gently de-stemmed; wild yeast fermentation; rested in neutral large oak (500L); minimal intervention—no fining, no filtration, no or minimal added SO2.
