Tasting Note
Vibrant dark cherry and wild berry with thyme, wood spice and liquorice. Juicy, textural palate shows dark fruit, warm spice and savory herb notes with fresh acidity and a clean, persistent finish.

Food Pairing
Western: roast lamb, grilled pork, duck, chorizo, tapas, aged Manchego. Asian: Korean BBQ, char siu, teriyaki beef, miso-glazed aubergine, yakitori.

Production Method
Hand-harvested old-vine Garnacha and bush Tempranillo; 25–30% whole bunches, 3–4 day cold soak, spontaneous ferment in small open vats, short maceration; ~12 months in 2nd–3rd year French barriques.
