Tasting Note
Bright lemon, white tea and white flowers with toasted bread and ripe white/yellow fruit. Chalky, saline minerality, crisp salivating acidity and integrated oak; long, slightly bitter-tinged finish.

Food Pairing
Roast chicken with morels, seared scallops, turbot, creamy Époisses or other soft cheeses; Asian: miso‑glazed black cod, steamed fish with ginger & scallions, sushi or tempura.

Production Method
Hand-harvested; whole-cluster pressing, natural settling, fermented and aged 12–18 months in 1–3 year barrels and demi-muids with some new oak; élevage on the lees without bâtonnage; bottled after extended rest. Certified organic/biodynamic practices.

Domaine de Villaine (Aubert & Pamela de Villaine) bought the property in 1971. Small, Burgundian estate applying organic/biodynamic viticulture and traditional, low-intervention vinification influenced by DRC practices.
