Tasting Note
Fresh floral and white-fruit aromatics (pear, green apple, pineapple) with subtle exotic notes and gentle vanilla. Dense, rounded palate with chalky minerality, bright acidity and a long saline finish.

Food Pairing
Western: Roast Bresse chicken, grilled or butter-poached salmon, scallops with beurre blanc, quenelles de brochet. Asian: salmon in coconut milk, miso‑glazed cod, richer sushi (salmon/tuna), tempura.

Production Method
Organic viticulture (planted 2016); hand-harvested; fermented and aged 12–18 months in used oak barrels and demi-muids; low-intervention winemaking.

Domaine de Villaine (A. & P. de Villaine) bought the estate in 1971; now managed by Pierre de Benoist. Estate farms biodynamically/organically across Bouzeron and the Côte Chalonnaise.
