Tasting Note
Bright ruby with aromas of black cherry, raspberry, floral violet and subtle spice. Silky palate, fresh acidity, ripe fine tannins and a mineral, fruity finish—elegant, dense and drinkable now or with short ageing.

Western: roast duck, roast chicken, pork tenderloin, mushroom risotto, charcuterie, soft cheeses. Asian: Peking duck, char siu pork, miso-glazed salmon or eggplant, teriyaki chicken, yakitori, light spicy Szechuan dishes.
Production Method
Hand-harvested Pinot Noir; ~14–18 day maceration (partial whole clusters), indigenous yeasts, aged ~12–18 months in 1st–5th use oak barrels; organically farmed vineyards.
