Tasting Note
Ripe red and black fruit (cherry, raspberry, blackcurrant) with spicy, earthy and leather notes. Silky texture, vibrant acidity, persistent fine tannins and a long, peppery finish.

Food Pairing
Roasted duck with cherry sauce, beef or venison, mushroom risotto, aged hard cheeses; Asian pairings: char siu or teriyaki beef, Korean bulgogi, mushroom hotpot, grilled salmon with miso glaze.

Production Method
Organically farmed; partial whole-cluster fermentations with native yeasts, 2–3 weeks maceration; aged 10–12 months in a mix of large oak casks and barrels.
