Tasting Note
Mineral-driven Chardonnay with white flowers, lemon and stone-fruit notes, flinty/saline streaks and a clean, persistent finish. Energetic, precise and ageworthy.
Food Pairing
Western: roast chicken, grilled sea bass, scallops, goat cheese, Comté. Asian: sushi/sashimi, miso-glazed cod, tempura, steamed fish with ginger and scallion, lightly spiced Thai coconut fish curry.
Production Method
Hand-harvested Chardonnay from several mid-slope parcels; gently pressed, fermented and aged in large neutral casks with restrained new oak; aimed for ageing.

Owned by Aubert & Pamela de Villaine (purchased 1971); estate in Bouzeron focuses on low-yield selections, older vines and sustainable/organic practices. Managed by family/relatives.
