Tasting Note
Lemon and green apple with flint, crushed herbs and beeswax; saline, chalky minerality, satiny texture and a slightly bitter citrus finish.

Western: oysters, grilled scallops, roast chicken, goat cheeses (Cantal, Beaufort), creamy pasta; Asian: sushi/sashimi, ceviche-style dishes, Vietnamese spring rolls, Thai green papaya salad, steamed fish with ginger and scallions.

Production Method
Certified organic vineyards; hand-harvested Aligoté Doré; slow pressing, fermented and aged sur-lie in large neutral casks/foudres for ~10–12 months.
