Tasting Note
Fresh black and red cherry, plum, violets and kirsch with notes of pencil shavings, spice and subtle cedar; medium-full, vibrant fruit, soft ripe tannins and a savory, energetic finish.

Food Pairing
Western: roast lamb, braised beef, duck confit, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ beef, Sichuan-style braised beef, miso-glazed eggplant.

Production Method
Hand-picked, destemmed and fermented in temperature-controlled stainless steel; roughly 70% aged in tank and c.30% matured in oak (about 30% new) to integrate spice and structure.
