Tasting Note

Red and black cherry, plum, dried herbs and earth, with spice and subtle vanilla; medium-bodied, fresh acidity, firm but integrated tannins and a savory finish.

Western: roast lamb, braised beef, venison, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ short ribs, mushroom and soy-braised dishes.


Production Method

Hand-harvested; fermented in temperature-controlled stainless-steel vats; aged ~12 months in French oak (≈30% new). Modern, precise vinification and careful parcel blending.

Owned and run by the Vauthier family (owners of Château Ausone); 16 ha on the St‑Émilion plain, vines ~20–25 years; estate used as a test-bed for Ausone techniques.
