Tasting Note
Lusciously sweet botrytised Semillon—apricot, honey, marmalade, dried stone fruit, orange zest, vanilla and butterscotch. Intense sweetness balanced by vibrant acidity and a long honeyed finish.

Western: blue and washed‑rind cheeses, foie gras, salted caramel desserts, fruit tarts. Asian: mooncakes, mango sticky rice, Chinese egg tarts, light sweet dim sum, green‑tea desserts.

Production Method
Hand‑harvested in multiple passes of botrytised fruit; fermented separately (many parcels) in French oak barriques and matured ~12 months in mixed‑age French oak before blending and bottling.

De Bortoli is a multi‑generational Australian family winery; Darren De Bortoli created Noble One in 1982. The wine is sourced from long‑standing Riverina vineyards; Julie Mortlock is senior winemaker.
