Tasting Note
Deep ruby with ripe plum, blackberry and black cherry, peppery spice, subtle vanilla/oak and velvety chocolate-like tannins; medium–full-bodied with a smooth, savoury finish.

Food Pairing
Western: grilled steak, lamb chops, barbecue ribs, mushroom risotto, aged cheddar. Asian: Peking/roast duck, char siu, Sichuan beef, Korean BBQ, chicken satay.

Production Method
Harvested at flavour ripeness; fermented on skins (short maceration ~5–6 days at ~24–28°C) and matured briefly in American and French oak to add spice and vanillin.
