Tasting Note
Dark garnet color. Aromas of ripe black cherry and plum with toasted oak, cinnamon and nutmeg. Palate is full-bodied, supple with ripe fruit, soft dense tannins and a long, spicy finish.

Food Pairing
Western: roast lamb, beef short ribs, duck confit, mushroom risotto, aged cheddar. Asian: Peking duck, char siu, Korean BBQ (bulgogi), braised beef with soy, shiitake mushroom stir-fry.

Production Method
Classic Bordeaux vinification with careful selection of Right Bank Merlot and Cabernet Franc; aged ~12 months in French oak barrels, some new oak used.
