Tasting Note
Powerfully smoky notes of burnt pepper with red/black fruit, sultana and patchouli. Saffron, warm bread and light tobacco follow. Firm and opulent on the palate with balanced acidity, pronounced tannins and a long mineral-tinged finish.
Food Pairing
Western: roast lamb, roasted duck, mushroom risotto, charcuterie, aged cheeses. Asian: Peking duck, bao with black garlic, peppery Sichuan dishes, sweet-and-sour preparations, Cantonese roast meats.
Production Method
Hand-harvested and sorted; ~60–80% whole-cluster fermentation; 15–17 day maceration with 5–7 punchdowns; pressed, settled, and aged 13–14 months in 30–40% new oak; bottled without fining or filtration.
