Tasting Note
Perfumed red and dark cherry, raspberry and floral notes with baking spice, earth and chalky minerality; silky mid-palate, fine-grained tannins, lively acidity and a long savory finish.

Food Pairing
Western: roast duck, beef bourguignon, poulet de Bresse, mushroom risotto, aged soft cheeses. Asian: Peking duck, char siu, Korean BBQ, miso-glazed aubergine, grilled shiitake.

Production Method
Hand-harvested; approx. 80% whole clusters; 17-day cuvaison with pigeages and remontages; aged ~14 months in French oak (c.40% new).
