Tasting Note

Iron-mineral nose with pickled/ red berries, rosewater, fennel and saffron. Lively acidity, assertive tannins, cocoa-like richness and a slightly bitter, saline finish—compact, ageworthy and floral-tinged.

Western: roast duck, beef tenderloin, mushroom risotto, braised game, foie gras ravioli. Asian: teriyaki beef, Korean BBQ short rib, miso-glazed mushrooms, shiitake ramen, soy-braised pork.


Production Method

Hand-harvested and sorted; ~90% whole-cluster; 15-day maceration with punch-downs and pump-overs; pressed, settled two weeks, aged 14 months in 40% new oak; bottled unfined and unfiltered.
