Tasting Note

Fragrant red and black cherry, wild berries, peony and licorice with stony minerality, refined firm tannins and a long, elegant finish.


Food Pairing

Western: roast duck, beef bourguignon, venison, mushroom risotto, aged soft cheeses. Asian: Peking duck, char siu, soy-ginger or teriyaki lamb, miso mushroom dishes, shiitake-rich hot pot.


Production Method

Hand-harvested fruit; significant whole-cluster fermentation for grands crus; fermented in concrete/steel, pressed and aged 14–18 months in oak with limited new barrels; organically farmed vineyards.
