Tasting Note
Bright ruby with aromas of cherry, raspberry, peony, liquorice and warm spice. Silky palate of red/black fruit, subtle porcini-like savoriness, gentle tannins and a lingering, slightly peppery finish.
Food Pairing
Roast duck, coq au vin, mushroom risotto, charcuterie and aged cheeses; Asian: wok-fried beef with vegetables, Peking/roast duck, Korean BBQ, shiitake or mushroom stir-fries.
Production Method
Hand-harvested and sorted; ca. 60% whole-cluster fermentation with an ~11-day maceration. Aged ~13 months in French oak (≈25% new, remainder 1–3 year barrels). Bottled without fining or filtration.
