Tasting Note

Robust, powerful nose of blackcurrant, blackberry and black cherry with clove, cumin and Cajun spice. Finer on the palate with marked acidity, mineral tension and warm persistent finish.

Western: roast duck, roast beef, lamb, venison, mushroom risotto, coq au vin. Asian: Peking duck, char siu, Korean BBQ (galbi), miso-glazed eggplant or salmon, shiitake stir-fry.


Production Method

Hand-harvested; 60% whole-cluster fermentation; 15-day maceration with 5–7 punchdowns; 13 months ageing in 30% new oak; bottled without filtration.
