Tasting Note
Aromas of cherry, violet, tonka and rhubarb with warm raspberry jam, liquorice and maple hints. Spicy palate with melting, ripe tannins, lively tension and a balanced, lingering finish.

Food Pairing
Western: roast duck (Rossini), veal medallion, lamb chops, mushroom risotto, foie gras. Asian: Peking duck, char siu, miso-glazed fish, soy-braised short ribs.

Production Method
Hand-harvested; ~90% whole-cluster fermentation; 15-day maceration with regular punchdowns; aged 14 months in 40% new oak; bottled unfined and unfiltered.
