Tasting Note
Deep ruby with aromas of wild cherry, black fruits, rose and leather. Palate shows concentrated dark fruit, smoky spice and fine-grained tannins, finishing long, savory and slightly mineral.

Western: roast beef, tournedos Rossini, roasted pigeon, aged cheeses. Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ (bulgogi or galbi), braised beef with soy and star anise.
Production Method
Hand-harvested; ~80% whole-cluster fermentation; cold pre-ferment maceration and ~14–15 day vatting; aged ~14 months in oak (≈40% new, remainder 1–3 year barrels); bottled unfined/unfiltered.
