Tasting Note
Deep ruby Pinot Noir showing blackcurrant, blackberry and raspberry with notes of leather, truffle, toasted vanilla and warm spice. Velvety, sapid palate with polished yet present tannins and a long, savory finish.

Food Pairing
Western: roasted game, entrecôte/steak, mushroom risotto, duck confit, aged cheeses. Asian: miso-glazed pork or aubergine, teriyaki beef, soy-braised short ribs, shiitake stir-fry, umami-rich ramen or mushroom hotpot.

Production Method
Hand-harvested and sorted; ~80% whole-bunch fermentation; 15-day maceration with punchdowns and pump-overs; aged ~13 months in oak (40% new); bottled unfined and unfiltered.

Domaine David Duband (family domaine founded 1963; David took over 1991) farms organically across ~17 ha in the Côte de Nuits. Clos de Vougeot vines ~50 years on brown limestone and clay soils.
