Tasting Note
Perfumed red cherry, violet and blackcurrant sweets with hints of pomegranate and Darjeeling tea. Saline ash and oyster-shell minerality; sapid, taut palate with fine, silky texture, lively acidity and a long floral finish.
Food Pairing
Western: roast duck, veal, mushroom risotto, beef tenderloin, Bresse chicken with morels. Asian: Korean barbecue, Peking duck, teriyaki chicken, mushroom soba, shrimp samosas with curry.
Production Method
Hand-harvested and sorted; ~60% whole-bunch; 15-day fermentation with punchings and pump-overs. Pressed, settled two weeks, aged ~13 months in French oak (≈30% new), racked, rested and bottled without fining or filtration.
Vineyard Info
Domaine David Duband (family estate founded 1965; David took over 1991). ~27 ha in Côte de Nuits; works organically, using whole-bunch vinification and minimal intervention for terroir-driven Pinot Noir.
