Official producer tasting notes (Domaine David Duband). Positive review/notes from Burgundy Report (Dec 2022). 6–13%
Tasting Note
Ripe black and red fruits, candied notes and dried rose perfume with sap and cinnamon hints. Cooked-fruit flavours, fine bitterness and delicate vegetal freshness lead to a long, salivating finish.
Food Pairing
Western: lamb confit, roast duck, coq au vin, mushroom risotto, soft cheeses. Asian: soy/hoisin duck, char siu pork, mushroom stir-fry, mild pork ramen, grilled miso aubergine.
Production Method
Hand-harvested; ~60% whole-cluster fermentation; 11-day vatting with 5–7 punchdowns and pump-overs; pressed, settled two weeks; aged 1–3 years in French oak; bottled without fining or filtration.
