Tasting Note
Deep garnet. Blackcurrant, blackberry, cedar, sweet tobacco and crushed stone. Medium-full palate with ripe fruit, saline minerality, fine supple tannins and a long, chocolate-tinged finish.

Food Pairing
Western: roast beef, lamb chops, venison, mushroom risotto, aged cheeses. Asian: Peking duck, char siu pork, Korean BBQ (bulgogi), beef noodle soup, Sichuan-style dishes (moderately spicy).

Production Method
Hand-harvested; parcelled fermentation in temperature-controlled vats with gentle extraction; aged ~12 months in French oak (≈30% new); egg-white fining and regular rackings.

Second wine of Château Montrose (2ème Cru Classé). Estate owned by Martin & Olivier Bouygues since 2006; vineyards on deep gravel over clay; La Dame created in 1983 as tribute to Yvonne Charmolüe.
