Tasting Note

Fragrant red berry core of cherry, raspberry and wild blackberry with rose petal, spice and subtle savoury earth. Silky fine tannins, bright acidity and a lingering spiced-fruit finish—elegant, perfumed and approachable.

Food Pairing

Western: roast duck, peppered pork chops, mushroom risotto, lamb tagine. Asian: miso-glazed salmon, teriyaki chicken, shiitake ramen, Korean BBQ pork.

Production Method

Blended parcels from multiple Tasmanian sites. Hand-harvested, partial whole-bunch inclusion, gentle open-top fermentation with punchdowns; matured in French oak barriques (≈30% new) for ~9–10 months before bottling.
