Tasting Note
Immensely opulent and concentrated: black plum, black cherry, raisin, dark chocolate, espresso and spice, with truffle, tobacco and leather notes. Syrupy sweetness balanced by refined tannins and bright acidity, finishing very long and persistent.

Western: dark/bittersweet chocolate desserts, chocolate soufflé, blue or aged cheeses, foie gras, roasted game. Asian: Peking duck, hoisin-glazed pork, char siu, red-braised pork, spiced desserts with nuts and sesame.
Production Method
Select very-ripe grapes (from Amarone vineyards), partial drying on-vine/air-dried, ~4 months appassimento. Fermented in stainless steel (~28°C) with extended maceration, aged in new American oak barriques for ~24 months.
