Tasting Note

Light amber; aromas of matsutake mushroom and cured-charcuterie. Umami-driven palate with citrus peel, rice, mineral and cured egg-yolk notes; medium-long savory finish.

Western: foie gras, cured meats, aged cheeses, roasted/grilled fish. Asian: sashimi/sushi, yakitori, sukiyaki, mushroom dishes (matsutake), soy-marinated or umami-rich preparations.


Production Method

Junmai Daiginjo classification; blended/aged sake, aged in ceramic barrels and presented in a white ceramic/swing-top bottle within a cedar wood box. Limited-production blend combining aged koshu and top-grade Junmai Daiginjo.

Daimon Sake Brewery (Daimon Shuzo), family-owned since 1826 in Osaka; led by Yasutaka Daimon (6th generation). Toji Series released as limited collector editions (1,000 bottles).
