Tasting Note

Soft, gently aromatic Junmai Ginjo with honeydew melon, buckwheat and licorice notes, subtle mineral/Kansai umami, light sweetness, crisp acidity and a smooth clean finish.

Production Method

Junmai Ginjo brewed from 100% Yamada Nishiki (55% polish). Low-temperature, long fermentation using Ikoma mountain meltwater; no added brewer’s alcohol.

Daimon Sake Brewery (Daimon Shuzō), founded 1826 in Katano, Osaka. Small-scale traditional brewery focused on careful, low-temperature fermentation and local mountain water.
