Tasting Note
Fragrant floral and delicate fruit aromas; gentle rice sweetness opens to rich umami, with subtle white‑chocolate and cucumber hints. Clean, elegant finish with medium‑long persistence.

Asian: sashimi, sushi, tempura, steamed fish, chawanmushi, hot pot (nabemono). Western: soft cheeses, grilled fish, roasted chicken, light pasta, shellfish, white meat and mild creamy dishes.

Junmai Daiginjo brewed from 100% Yamada Nishiki polished to 35%. Small‑batch, low‑temperature long fermentation; traditional pressing (also a gravity‑drip Shizuku edition exists).
