Tasting Note
Luscious botrytised Sauternes with honeyed apricot, ripe mango, candied citrus, marmalade, toasted brioche, beeswax and spice. Juicy acidity gives lift; extremely long, citrus-tinged finish.
Food Pairing
Western: foie gras, blue (Roquefort) or aged comté, tarte Tatin, crème brûlée. Asian: mango sticky rice, Peking duck, spicy Thai curry, Cantonese roast pork with hoisin.
Production Method
Multiple hand-picked passes selecting botrytised berries; fermentation and élevage in French oak barrels with significant new oak and extended ageing (~24–36 months).
